Scrambled Egg Veggie Tacos

Ingredients

  • 2 teaspoons olive oil divided
  • ½ onion diced
  • ½ bell pepper diced
  • 1 teaspoon cumin
  • 4 eggs beaten
  • ½ teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 4 corn tortillas warmed
  • Optional toppings: sour cream salsa, beans, shredded cheese, cilantro, lime wedges

Instructions

  • In a skillet over medium heat, add 1 teaspoon oil. Add onion, pepper, and cumin and saute, approximately 3 minutes. Set aside on a plate.
  • In same skillet over medium heat, add remaining 1 teaspoon oil. Add eggs, salt, and pepper and cook. Gently move eggs while cooking with a spatula or wooden spoon till scrambled to desired consistency.
  • Place tortillas on two plates and split sauteed vegetables and scrambled eggs between them.
  • Serve with optional toppings.
