Peppermint Glazed Dairy Free Brownies

  • Brownies:
  • 1 cup AP flour or whole wheat pastry flour
  • ¼ cup cocoa powder
  • ¼ teaspoon kosher salt
  • ½ teaspoon baking powder
  • ½ cup chocolate chips
  • 2 tablespoons vegetable oil
  • ½ cup maple sugar
  • 1 teaspoon vanilla
  • ¼ cup unsweetened plain almond milk
  • 2 eggs
  • Peppermint Glaze:
  • 1/3 cup confectioner’s sugar
  • 1 tablespoon unsweetened plain almond milk
  • 1/8 teaspoon peppermint extract


  • Preheat oven to 350 degrees F. Spray an 8-inch square baking pan with oil spray.
  • In a bowl, mix flour, cocoa, salt, and baking powder.
  • In a microwave safe bowl, add chocolate chips and oil. Microwave for 1 minute, mix, and microwave in 10-second increments until melted.
  • In a bowl, add maple sugar, vanilla, almond milk, and eggs and whisk together.
  • Add melted chocolate mixture slowly and in small amounts to the sugar mixture, whisking constantly.
  • Add dry ingredients into wet ingredients and mix well. Pour mixture into pan, smooth top, and bake for 20 minutes, until a toothpick comes out clean.
  • In a bowl, whisk together glaze ingredients.
  • When brownies come out of the oven, drizzle peppermint glaze on top. Allow brownies to cool for 15 minutes before cutting
