4 Ingredient Oatmeal Cookies
These 4 Ingredient Oatmeal Cookies are perfect when you want a batch on the fly because you probably already have the ingredients at home!
There’s nothing worse than when you want a little sweet treat, but the recipe you find has tons of ingredients and requires everything but the kitchen sink to make. Let’s not forget about all the dishes that go along with the process.
That’s why I created these oatmeal peanut butter cookies from scratch that contain just 4 simple ingredients and there’s barely any added sugar. Almost forgot to mention you also do not need bananas, butter, flour, or oil!
What Makes These Oatmeal Cookies Healthy
The peanut butter provides a little protein and healthy fats without having to add oil or butter. They are also higher in fiber than your average oatmeal cookie, because it comes from the oats without additional flour being needed.
Even though some oatmeal cookies contain bananas for natural sweetness, you really don’t need it. Which makes these cookies free from artificial and added sugar (depending on what add-ins you choose).
Ingredients
- Peanut butter – the creamy kind. Also, check the label to make sure it’s just peanut butter and salt. No need for preservatives.
- Egg
- Rolled Oats – not the quick cooking kind and not steel cut
- You choose: raisins, dried cherries, or chocolate chips
How to Make 4 Ingredient Oatmeal Cookies Without Bananas
Prep your baking sheet by lining it with parchment paper and preheat the oven to 350 degrees.
Combine the peanut butter and egg in a medium mixing bowl. Add the rolled oats and raisins, then mix well.
Use a teaspoon to make 1 inch cookie dough balls, then place them on the baking sheet. Use the back of the spoon to slightly flatten the tops or make a criss cross with a fork. You can also use a cookie scoop to get the dough out if that’s easier.
Bake for 10 to 12 minutes, then allow them to cool before eating.
Are These Peanut Butter Oatmeal Cookies Gluten Free?
They can be as long as you use gluten free oats. I recommend Bob’s Red Mill.
Tips and Variations
Storage: Once the cookies have cooled you can keep them in an airtight container or plastic bag for up to 5 days. Leave at room temperature or store in the fridge.
Freezing: Place them in a single layer, separated by parchment paper if needed in a plastic bag. Freeze for up to 2 months and thaw in the fridge overnight before serving or eating.
Add Ins: Feel free to experiment with different types of chocolate chips, dried fruit, nuts, and maybe even shredded coconut.
Nut Butters: You can also swap the peanut butter for almond or cashew butter if desired.
Nut Free: Try using sun butter instead.
Sweeter: If you want the cookies to be a tad sweeter, add a drizzle of honey or maple syrup.
