Sheet pan dinners are a great way to get dinner on the table easily with minimal clean up. Spice up your routine and chicken dinner with my Apricot Chicken recipe. My secret? A little bit of whole grain mustard keeps it from being too sweet. A combination of sweet and spicy gives great flavor and makes this a favorite all around!

How to make Apricot Chicken

Preheat your oven to 400 degrees F and line a sheet pan with foil.  Next, mix your apricot jam, mustard, salt, and pepper in a bowl.  Place your chicken on the pan and spoon the jam mixture over the chicken.  Bake for about 30 minutes until the chicken is cooked through!  Have a yummy dinner on the table in less than 40 minutes.  The best part?  Since this is all made on one sheet pan, clean-up is so easy!

Apricot Nutrition

Apricots are very nutritious stone fruits.  They are a great source of beta-carotene, which converts to Vitamin A in our bodies.  It plays an important role in fighting disease, and maintaining skin, hair, and bone health.  Apricots also provide a good source of Vitamin C, fiber, Iron, and Potassium.  They have a sweet, tart flavor that both kids and adults enjoy.

Chicken Nutrition

Chicken is a great source of protein.  Just 3 ounces of chicken drumsticks provide 23 grams of protein and only 180 calories.  Chicken also provides the essential amino acids we need to get from our diets.  Amino acids are the building blogs of protein, which makes up our muscle, hair, skin, and nail cells.  Protein also helps build and repair the tissues in our bodies.  My Apricot Chicken is an excellent way to incorporate some extra protein into your day.

Other options to change up this recipe

If you enjoy this recipe, try changing up the jam you put on the chicken.  You could use an orange marmalade or how about blueberry jam.  You can also use different parts of the chicken like the breast or the thigh.  I prefer bone-in with skin because it keeps the meat juicer, but skinless works fine as well.

What can I pair with this recipe?

This sheet pan Apricot Chicken is perfect as an appetizer to share with friends.  To make it more of a complete meal, just add a starch and some veggies.  This chicken would be delicious with some brown rice and asparagus or try some sweet potato and broccoli.  You could also serve it with a salad or some grilled vegetables.  Let me know your favorite ways to enjoy your Apricot Chicken!

Storage

Once cooked, you can store the chicken covered in your refrigerator for about 5 days.

Ingredients

  • 8 chicken drumsticks
  • ½ cup apricot jam
