Mango Overnight Oats

Preparing a meal in advance, like my Mango Overnight Oats is a gift to your future self.  Finding time in the morning to prepare and eat a nutritious breakfast can be tricky and we too often end up eating sugary cereal or even worse, nothing! Make my Mango Overnight Oats, place in the refrigerator and enjoy!

Mango Overnight Oats

This is one of my favorite food trends, it has turned oats, the centuries old star of oatmeal, into a 21st century sensation.  My Mango Overnight Oats makes the benefits of eating oats quick, easy and portable for our busy lives. Oats are often seen as boring and bland, making their benefits, like high fiber, inexpensive and long shelf-life inaccessible to so many people.

Traditional oatmeal uses a 2:1 ratio of water to oats and simmers the oats until the liquid has been absorbed.  It requires a few minutes of your precious morning and leaves you with a pot to clean! Also, during the warm Summer months, a warm breakfast is not appealing to me and the creamy coolness of my Mango Overnight Oats is ideal.

The process of soaking the oats in my Mango Overnight Oats replaces the need for cooking them on the stovetop.  Feel free to adjust the ratio of liquid to oats based on your texture preferences and how many toppings you add.

You can adjust the recipe to your preferences, but I highly recommend adding chia seeds.  Chia seeds are full of healthy omega-3 fats, fiber, protein and micronutrients.  The chia will also thicken as it soaks adding a nice texture. Oats

My preferred oats to use are quick-cooking, rolled oats. They are the middle-oat between rolled and instant oats. They make for the most perfect texture and creaminess.  If you only have rolled and instant, I would recommend using rolled oats.  Instant oats lead to a mushy, porridge texture that is not my favorite. Steel cut oats are also not recommended, they will not adequately soften overnight.

Oats are naturally gluten-free, but if you have celiac disease or are strictly avoiding gluten make sure to buy oats that are certified gluten-free. This will ensure that there is no cross-contamination from gluten containing products.

The addition of mango to overnight oats adds a tropical twist with a burst of flavor.  The natural sugar found in mango makes adding a sweetener unnecessary.  Frozen mango is a staple in my freezer, it goes great in smoothies, sorbet, and popsicles. I even enjoy letting it thaw in the refrigerator for 30 minutes and enjoying it as a snack.

Mango is a tropical fruit, and similar to avocado tends to go from rock hard to overripe super quick and can be difficult to use fresh in recipes.  This is why for my Mango Overnight Oats I like using frozen mango.  It comes pre-chopped and will thaw overnight in the refrigerator.

Mango is also rich in antioxidants in the form of over a dozen different polyphenols.  Antioxidants play a vital role in protecting our bodies from free radicals.  Mangos are also rich in vitamin A and vitamin C, both of which promote a healthy immune system.  Mango also contains folate, vitamin K, and several B vitamins.

Overnight Oats, on-the-go!

If you plan to take the Mango Overnight Oats out of the house, I recommend preparing it in a pint mason jar or your preferred plastic container. Add the oats, milk of choice, and all other ingredients.  Give it a good shake, and let it soak in the refrigerator overnight.

I will typically add extra nuts, seeds or peanut butter to my Mango Overnight Oats to add additional protein to this yummy breakfast to make it heartier.  If you do not like mango, there are SO many different ways to enjoy overnight oats, some of my favorite additions are fresh or frozen berries, bananas and raisins.

Ingredients

  • ½ cup quick cooking oats
  • 1 tablespoon chia seeds
  • Pinch of salt
  • 1 cup unsweetened almond milk or cow’s milk or other plant-based milk
  • ½ cup frozen mango
  • Optional: 2 tablespoons chopped nuts

Instructions

  • Add oats, chia seeds, and salt to a mason jar or air tight container and mix together.
  • Add almond milk and mix well.
  • Add mango, close container, and place in refrigerator overnight.
  • When ready to eat: open container and mix well.
  • Optional: Top with chopped nuts.
