Citrus Glazed Salmon with Soba Noodles

Ingredients

  • ¾ pounds salmon raw
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 cup orange juice
  • 1 ½ teaspoon low sodium soy sauce
  • 1 cup Japanese soba noodles cooked
  • 2 tablespoons spring onion or scallions small, raw

Instructions

  • Preheat oven to 350 degrees F.
  • Season salmon with salt and pepper, sear skin side down in pan with olive oil. Finish in oven to desired doneness.
  • Deglaze the same pan that cooked the salmon with orange juice and soy sauce. Bring it to a simmer and reduce orange juice by half to a syrup consistency.
  • Plate salmon and noodles. Add orange glaze over salmon and soba noodles. Garnish with scallions.
