Vegan Mug Brownie
My Vegan Mug Brownie is chocolatey, fudgy, and ready in less than 2 minutes! Made with ingredients that you probably already have in your pantry!
Have you ever been sitting around after dinner and really wished you had a brownie or anything that is chocolate for that matter? At this point, you don’t want to go to the store and you definitely don’t want to worry about making a full batch.
That’s where my microwave mug brownie comes in! Obviously, you can make as many as you like, but I’ve developed the recipe to be single-serving and vegan-friendly! Even if you aren’t vegan and are just trying to cut back on dairy, you won’t even be able to tell the difference between my mug brownie and the traditional version that is loaded with eggs and oil.
Single serving recipes can be a good thing! Not only are they super easy to make and require fewer ingredients, but they also help with portion control and minimize waste.
While this mug brownie is perfect just the way it is, don’t forget you can serve it with your favorite vegan-friendly ice cream, nuts, sprinkles, mini chocolate chips, nut butter, flavored greek yogurt, strawberries, raspberries, or candy! Whipped coconut cream is another topping option and is still dairy free!
My other two favorites are my Paleo Brownies and Peppermint Glazed Dairy Free Brownies, which you should definitely add to your dessert list with the holidays just around the corner!
What You Need To Make an Easy Vegan Mug Brownie
- Flour – you can use all-purpose or whole wheat pastry flour
- Sugar – I love using maple sugar, but if you don’t have it you can make the swap for granulated
- Cocoa powder – it’s what gives the brownie a chocolatey flavor
- Baking powder – helps to keep it fluffy
- Almond milk – I prefer to use the unsweetened kind. You can also use oat milk or any other plant-based variety
- Oil – extra virgin olive oil is my preference!
- Vanilla extract
How to Make a Brownie in a Mug That’s Vegan Friendly
Grab your favorite mug. Preferably one that is at least 10 ounces and that is microwave safe.
Add the sugar, flour, cocoa and baking powder, almond milk, vanilla, and oil. Stir until it’s mixed together well.
Place the mug in the microwave and cook on high for 60 to 90 seconds.
Garnish with powdered sugar for the ultimate healthy-ish sweet treat!
Tips for Making
- If you want multiple servings, it’s best to make them in separate mugs and microwave them separately.
- For a moist, lava texture on the bottom, cook for just a minute.
- Want more of a cakey brownie? That’s when you should cook it for 90 seconds.
- Mix the ingredients in the mug well before cooking…You don’t want to end up with a mouthful of cocoa powder!
- Drizzle some peanut butter on top before serving, or go with a scoop of vegan ice cream!
