Watermelon Salad
Here’s something refreshing to serve in this holiday season full of rich foods!
Ingredients
- 2 cups seedless watermelon diced
- 1 English cucumber diced
- 1 cup cherry tomatoes halved
- 8 ounces feta cheese crumbled or diced
- 2 scallions chopped
- 1/3 cup mint chopped
- ¼ cup white wine vinegar
- ¼ cup extra virgin olive oil
- ¼ teaspoon salt
- 1/8 teaspoon ground pepper
Instructions
- Place watermelon, cucumber, tomatoes, feta, scallions, and mint in a bowl.
- Whisk vinegar, oil, salt, and pepper together in small bowl.
- Pour dressing over fruit and vegetables and toss.
