Ingredients

  • 2 cups seedless watermelon diced
  • 1 English cucumber diced
  • 1 cup cherry tomatoes halved
  • 8 ounces feta cheese crumbled or diced
  • 2 scallions chopped
  • 1/3 cup mint chopped
  • ¼ cup white wine vinegar
  • ¼ cup extra virgin olive oil
  • ¼ teaspoon salt
  • 1/8 teaspoon ground pepper

Instructions

  • Place watermelon, cucumber, tomatoes, feta, scallions, and mint in a bowl.
  • Whisk vinegar, oil, salt, and pepper together in small bowl.
  • Pour dressing over fruit and vegetables and toss.
