Turmeric Cauliflower

How To Make Turmeric Cauliflower
First, preheat your oven to 400 degrees Fahrenheit. Mix cauliflower, oil, salt, pepper, cumin, coriander, turmeric, and garlic together in a large bowl. Spread out on a baking sheet and roast for about 40 minutes, mixing halfway through. Add zest and lemon juice after roasting is complete. Serve as an appetizer or as a side dish for dinner!

Cauliflower has become all the rage over the past few years because of how versatile it is. Think about cauliflower rice, cauliflower pizza, cauliflower gnocchi, the list goes on and on. But sometimes we forget about the simple and delicious roasted cauliflower! I love roasting cauliflower and changing it up by using different herbs and spices.
When choosing cauliflower in the store, look for one that has creamy white tops and bright green leaves that are firmly attached. Avoid any that have brown spots, loose sections, or tops that are too spread out. Once you buy cauliflower, you can refrigerate in a plastic bag for up to 5 days.
One cup of cauliflower provides 26.8 calories and 2g of protein. It also contains Vitamin C, Vitamin K, Folate, Magnesium, and Phosphorus. All About Turmeric
You may have heard about turmeric recently for its anti-inflammatory properties. Turmeric has been used historically in Ayurvedic medicine and is currently used as a complementary therapy for inflammation, arthritis, stomach, skin, liver problems and many other conditions. You most often find turmeric in curry’s, but it is also great in other dishes like my Turmeric Cauliflower!
One of the key components found in turmeric that may contribute to its antioxidant and anti-inflammatory properties is curcumin. Curcumin is a polyphenol and a member of the ginger family. Some research suggests it benefits inflammatory conditions, metabolic syndrome, and pain. It’s anti-inflammatory and antioxidant properties are best when combined with an agent called piperine, found in black pepper. My Turmeric Cauliflower has both turmeric and black pepper, a power combination!

Ingredients
- 1 head of cauliflower cut into bite-sized pieces
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/2 teaspoon turmeric
- 2 cloves garlic minced
- Zest of one lemon
- Juice of 1/2 lemon
Instructions
